How to Make Vegan Marshmallows at Home

Ingredients


  • 1 cup of aquafaba (the liquid from a jar of chickpeas)

  • 1 cup of caster sugar

  • 1 tablespoon of agar agar powder

  • 1 teaspoon of vanilla extract

  • A pinch of salt

  • Cornstarch and icing sugar for dusting


Step 1: Prepare Your Tools


To begin our vegan marshmallow-making adventure, make sure you have the following tools ready:


  • Mixing bowls

  • Hand or stand mixer

  • Saucepan

  • Whisk

  • Square baking pan

  • Parchment paper


Step 2: Let the Magic Begin


  • Prepare the Fluff : In a mixing bowl, whisk the aquafaba using a hand or stand mixer until stiff peaks form. This might take around 10-15 minutes, so be patient.

  • Create the Sugar Syrup : In a saucepan, combine the sugar, agar agar powder, vanilla extract, and salt. Heat the mixture over medium heat while stirring continuously until the sugar and agar agar dissolve. Bring to the boil, this is what will activate your agar agar powder to start setting.

  • Combine and Beat : With the mixer running, slowly pour the sugar syrup into the whipped aquafaba. Continue beating the mixture for another 10-15 minutes until it becomes thick and glossy.

  • Set the Marshmallow : Transfer the fluffy mixture into a square baking pan lined with parchment paper.

  • Let It Rest : Allow the marshmallow to set at room temperature for at least 4 hours or, even better, overnight.

  • Dust It : Combine the icing sugar and cornstarch and lightly dust your marshmallows using a seive.

Once the marshmallows have set, dust your cutting board with more cornstarch and icing sugar. Carefully cut the marshmallows into squares, ensuring to coat all sticky edges with the cornstarch-icing sugar mixture to prevent sticking.
